I made bacon chocolate chip cookies

Today I learned how to make bacon chocolate chip cookies with Chef Hans Pinto. He’s the Executive chef at Century Grill and he likes pork.

I’ve had them before, and I had a hankering for them (plus, I like sharing), so I DMd him and asked if I could come make some with him. Nice guy, he said “yes.”

Let’s start with the bacon. He chopped it up, put it on some more heat, an threw in some maple syrup. The real kind that comes from a tree, not a sugar factory. Voilà, candied bacon.

We followed the recipe closely and were extra vigilant. Some of the instructions didn’t make much sense, like beating 1 egg with a fork and adding precisely 1 3/4 tablespoons of said beaten egg to the sugar+butter mix, as well as 2 other eggs. We were expecting to have to do something else with the remaining chicken juice, but not so. Strange. I would have just said use 3 eggs.

You should have seen the 2 of us forming those cookies onto the sheets. Needless to say, we were quite precise, because we did NOT want to waste any of these bad boys. Who would?

The recipe said 13-15 minutes at 375°. How about 10-12 at 350°? We wanted soft, chewy, almost underbaked cookies that would make you crazy for more.

Lucky for me, there was some extra batter (now sitting in my freezer for a special occasion).
